Waterless Cookware

Waterless cookware is specially designed to enable 'waterless cooking,' a method of low-pressure steam cooking that relies only on the water and fats inherent in the food as well as the moisture gained during the rinsing stage. It essentially creates a pressurized cooking environment. To achieve this, waterless cookware typically consists of aluminum cladded with stainless steel plus an iron core to help disitribute heat evenly. Once cooking reaches an optimal temperature (and pressure), heat can be reduced dramatically or even turned off completely. The result is healthier meals where you lose a mere 2 or 3 percent of available nutrients compared with a staggering loss of 40 percent from more traditional cooking methods. (Cont. below ads)
(Cont.) Because the even distribution of heat prevents food burning or sticking, no high-calorie, high-cholesterol fats or oils are required. Less sticking also means easier cleanup. Additionally, since high heat is unnecessary with waterless cookware, and medium heat is only needed for a brief period of time, this method of cooking represents a marked savings in energy costs. This heat reduction also prevents overcooking, resulting in tastier food. Stacking waterless cookware is also a common feature that allows simultaneous preparation with a single burner.
